Hospitality across the Pashtun and Afghan borderlands has always been measured by the generosity of the table. Long before guests arrive, heavy iron cookware is seasoned and hearth fires are stoked with hardwood charcoal.

Every dish is prepared to order without shortcuts. Coarse rock salt, cracked black pepper, fresh green chilies, and ripe tomatoes render down slowly alongside prime cuts of meat to create deep, uncompromised flavor profiles.

Aromatic Basmati

Skewered cuts of lamb and beef are grilled directly over glowing embers, locking in natural juices while imparting a subtle smokiness.

Shinwari karahi is cooked over intense heat in heavy iron vessels, allowing fresh chilies and tomatoes to render into a rich, aromatic glaze.

Long-grain basmati is steam-cooked with caramelized carrots, raisins, and whole cardamom for traditional Kabuli pulao.
